A Banana cake is best when the bananas are overripe. So next time, when you have overripe bananas on hand? think banana cake and what better than a banana walnut cake recipe?  My favorite as a kid was a Banana date and walnut cake but over the years I have made it with and without any fruit. Both are equally good.

  • The recipe is fairly simple and easy. Below I use a stand mixer in the recipe. The key to getting this cake light and fluffy is in mixing the ingredients.
  • This is a very versatile recipe! I have served this cake without any frosting with a cup of tea or coffee. As a cake decorator, I frosted this cake with cream cheese frosting or Swiss Meringue Buttercream both were very popular with my customers.
  • If you plan to serve this as a coffee cake – bake it in a rectangular pan or loaf pan. But, if you want to use it as a frosted cake use round or square pans. I have given details for both in the recipe card below.
  • Banana caramel drip cake – If you have never tried a Banana cake with caramel? You are in for a surprise. Never again will a banana cake be the same again. Caramel and banana work similarly to apples and caramel. Perfect together. The slightly bitter aftertaste of caramel adds a different depth of flavor to the Banana.

Ingredients and substitutes

  • Flour – I like all-purpose flour for recipes with fruits because it helps stabilize the cake and prevents the cake from becoming too delicate.
  • Sour cream – while Greek yogurt is a great substitute for sour cream, you can also make your own at home.
  • Vanilla – I think vanilla extract is a great addition to lemon extract.
  • Fat – a combination of butter and oil makes this cake stable as well as light and airy.
  • Walnuts and bananas are a classic combination but pecan would work just as well.
  • Date, cranberries, and walnuts are another classic winning combination that never fails to impress. I’ve made it many times for tastings during cake consultations. Dates do add more sweetness while cranberries add a bit of sourness that helps cut into the sweetness of the bananas. Both are equally delicious in their own way.

Description

This recipe is an absolute classic for banana walnut cake. Moist, light and airy with a tender crumb.  Rich with the flavor of banana and walnuts. Perfect on its own as a coffee cake but absolutely divine when frosted with a luxury cream cheese frosting. 

Ingredients 

  • 375 grams (3 cups) All-purpose flour
  • tsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • ½ tsp Ground cinnamon
  • tsp Nutmeg Freshly grated
  • 113 grams (½ cups) Unsalted butter room temperature
  • 60 ml (¼ cups) Cooking Oil
  • 300 grams (1⅓ cups) Light Brown Sugar
  • 3 large Eggs
  • 3 large Bananas mashed (preferably overripe)
  • 120 ml (½ cup) Sour Cream
  • 2 tsp Vanilla Extract
  • 100 grams (¾ cups) Walnuts (chopped)
  • 100 grams (¾ cup) dates, raisins or cranberries (optional)

Cream Cheese Frosting (optional)

  • 228 grams (1 cup) Cream Cheese
  • 114 grams (½ cup) Butter (unsalted)
  • 312 grams ( cups) Powdered Sugar
  • 1/4 tsp Salt
  • 2 tsp Vanilla Extract
  • 2 tbsp ( ) Fresh Cream (if needed for consistency)
ADJUST SERVINGS HERE – 12 servings

Instructions

  • Preheat oven to 325F°/165°C/Gas mark 3
  • Pan – Grease, and line with parchment paper a 9 x 13 rectangular cake pan.
    Pro tip – You can also use 2 x 8-inch round cake pans, or 3 x 7-inch round cake pans for a layer cake.
  • Dry ingredients – In a medium sift together the flour, baking powder, baking soda, salt, and spices. – set aside. 
  • Cream – In the bowl of a stand mixer with the paddle attachment on medium speed cream together the butter, oil, and sugar until smooth.
    Pro tip – the mixture will become lighter and the sugar will be almost dissolved at the end of creaming about 3 to 4 minutes.
  • Eggs – Next, add the eggs one at a time, followed by the vanilla extract and mashed bananas.
    Pro tip – adding the mashed banana now will break any large banana pieces
  • Dry ingredients – Add the flour mixture alternating with the sour cream in three batches. Then add the chopped walnuts and dry fruits. Do not overmix.
    Pro tip – Overmixing at this time as the fruit will sink to the bottom of the cake.
  • Bake – Pour the batter into the prepared baking pan and bake in a preheated oven for 40 to 50 minutes or until a skewer inserted in the center comes out clean. 
    Pro tip – The 8-inch round  cake should take about 30 to 40 minutes 10 x 7-inch rectangular pan – should take about 25 to 35 minutes Loaf pan – should take about – 55 to 60 minutes 
  • Cool – Cool in the pan for 10 minutes then invert on a wire rack and cool completely before frosting. 

Cream Cheese Frosting (optional)

  • Cream – In the bowl of the stand mixer with the paddle attachment on medium speed, cream the butter, cream cheese, and whipping cream until light and fluffy
  • Sugar – Add the vanilla extract and salt followed by the powdered sugar one cup at a time. Once all the sugar is in continue to whip for a minute or two until light and fluffy. 
  • Frost – add frosting to the cool cake and decorate as desired.
