    Lemon blueberry cake

    • cups (310 g) All-purpose flour
    • 2 ½ tsp Baking powder
    • ½ tsp Baking soda
    • ½ tsp Salt
    • 1 cup (227 g) Unsalted butter softened
    • 2 cups (400 g) Granulated sugar
    • 4 large Eggs
    • 1 tbsp lemon zest from 2-3 lemons
    • ¼ cup Freshly squeezed lemon juice
    • 1 cup (240 ml) Buttermilk
    • cups (222 g) Fresh blueberries tossed in 1 tbsp of flour to prevent sinking

    Cream cheese frosting

    • 1 cup (227 g) Unsalted butter softened
    • 16 oz (450 g) 2 packages cream cheese, softened
    • 6 cups (720 g) Powdered sugar
    • 2 tsp Vanilla extract

    Instructions

    Lemon blueberry cake batter

    • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans and line the bottoms with parchment paper for easy removal.
    • Whisk together the flour, baking powder, baking soda, and salt in a medium-sized bowl. Set aside.
      2½ cups All-purpose flour, 2 ½ tsp Baking powder, ½ tsp Baking soda, ½ tsp Salt
    • In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
